Ingredients per person
- Udon1 bundle
- Beaten egg1
- Chopped green onionsas needed
- 【A】 (Soup Base)
- Mentsuyu(3x concentrae)50ml
- Water300ml
- 【B】
- Potato starch (or cornstarch)1 tsp
- Water 1.5 tbsp
Instructions

In a pot, add A (mentsuyu and water) and bring to a boil. Turn off the heat and add the B mixture (potato starch + water). Turn the heat to low and stir gently until the soup thickens. Then slowly pour in the beaten egg.

Let the egg cook without stirring until set, then give it a gentle stir.

In a separate pot, bring water to a boil and cook the udon noodles according to the package instructions.

Place the cooked udon in a bowl, pour the egg-thickened soup over the top, and garnish with chopped green onions.
