This month’s theme is “Hokkaido Box”

Hokkaido is a land not only for its spectacular natural attractions, but also for its food! 
This box is a special set filled with the abundant seafood and traditional local flavours unique to such Hokkaido.


‘Ramen’ rapidly penetrated the diet of Hokkaido, where the temperatures were cooler.
And it was made in a way that was tailored to the climate of each region, such as Sapporo’s ‘miso ramen’, Hakodate’s ‘shio ramen’ and Asahikawa’s ‘shoyu ramen’.

In Asahikawa, where the weather is bitterly cold, the soup is covered with a savoury oil (e.g. burnt lard), which prevents the soup from getting cold and allows the ramen to be served hot to the end. Hakodate, on the other hand, reflects the eating habits of immigrants at the time and uses a clear soup based on chicken and pork stock, which has a light and refreshing flavour. Kushiro’s ‘ramen’ also uses thin, curly noodles. This is said to have been done to shorten the boiling time of the noodles so that they could be served quickly to busy fishermen when the North Sea fishing industry was prosperous.

Most toppings are orthodox, but miso butter ramen and seafood ramen using Hokkaido’s specialities are also popular with tourists.

For Hokkaido, ramen is a ‘heritage of taste’ to be passed on to the next generation.
